California Cuisine Inspired Menu

For this personal chef dinner for six, I was asked by the client to come up with a four-course California cuisine inspired menu as he and his group are from the Midwest. The three menu options I offered him were packed with fresh ingredients, many grown in the state of California, as well as seasonal and vibrantly colored ingredients.
Here is the menu the group decided on:
Baked Prosciutto-Wrapped Pears with Basil and Balsamic Reduction Drizzle
Shaved Brussels Sprouts Salad Tossed in a White Wine Vinaigrette with Pan-Fried Goat Cheese and Pomegranate Seeds
Honey-Rosemary Brined Whole Chicken with a White Wine Herbed Gravy, Fingerling Potatoes with Carmelized Red Onions and Sauteed Asparagus and Cherry Tomatoes
Profiterole Trio with Salted Caramel, Pistachio, and Cherry Vanilla Ice Creams, Topped with Chocolate Ganache and Crushed Pistachios
