Green Beans in Tomato & Sour Cream Sauce

These green beans are truly delectable! With a mild tomato, sour cream and basil undertone, they are the perfect addition to just about any kind of meat.
3 Cups Fresh Green Beans (stems cut off)
3 Tbsp Salted Butter
1 Cup Onions (diced or thinly sliced)
1/2 Cup Green Bell Pepper (1/4 inch diced)
1 Cup Tomatoes (peeled, seeded, 1/4 inch diced)
2 Tsp Chopped Fresh Basil
1/2 Cup Sour Cream
Salt, to taste
Pepper, to taste
Cook the beans in salted, boiling water just until they are done, about 4-5 minutes (they will become a vibrant green color — if they become the color of a green olive, they are overcooked). Drain the beans, shock them in cold water, drain again and set them aside. In a saute pan, heat the butter over medium high heat and saute the onions just until they are translucent (about 3-4 minutes). Add the green bell pepper and cook for 3 more minutes. Add the tomato and basil, raise the heat to high and cook for 1 minute to remove the excess moisture from the tomato; cook longer if necessary. Add the green beans and saute them until they are heated completely. Stir in the sour cream, add salt and pepper to taste and serve hot.
