Helplessly Addicting Guacamole

Everyone has their own take on how to make guacamole, and they are all good.  There are also traditional ways to make it as well.  I came up with this recipe one day just throwing in everything I thought would taste well together and the dip was absolutely delicious!  It has always been very popular with my guests and anyone else I have made it for.  It’s also a very inexpensive dip to make and goes very well with my Homemade Tortilla Chips, naturally.

First, you will need to make Pico de Gallo:
5 Roma Tomatoes, seeded, 1/4-inch dice
1 White Onion, 1/4-inch dice
1/4 to 1/2 Bunch Cilantro, leaves only, coarsely chopped
Juice from 1 Lime

Add the pico ingredients to taste.  If you love onions, throw all of it in. If you like your pico with limited cilantro, then be conservative with it when you add it in.

For the guacamole:
5 Ripe Avocados, pitted and in 1-inch dice
1/4 to 1/2 Cup Pico de Gallo (to taste)
3 Tbsp Sour Cream
Juice from 1 Lime
Cilantro, leaves only, coarsely chopped (to taste)
Kosher Salt, to taste
Pepper, to taste

In a medium-sized bowl, add in the avocados, pico, sour cream and half of the lime juice.  Mix with a fork or spoon (or I highly recommend using the Mix ‘N Masher) to the consistency of your liking.  If the mixture is quite thick, you can add more of the lime juice and/or more sour cream.  Add in the cilantro to taste.  Season to taste with salt and pepper!  If kept covered and chilled in the fridge, this dip can last a few hours before it start to brown, so I recommend making it shortly before you plan on serving it.
